So I have a neighbor who is easy to love. She lives right next door to me, and she was born and raised in Mexico. The girl can cook. I have had the opportunity to enjoy some of her cuisine on a few occasions. This particular day, a few weeks ago, I was soooo hungry. I hadn't gone grocery shopping that week because we were about to leave for Idaho, and I wasn't going to stock the fridge just to leave for a week. (All that was in my fridge was eggs and condiments!) Anyhow, I had just finished doing some clients, and my blood sugar was pretty low. I wasn't feeling well, and I needed to eat something PRONTO! Zack was asleep, so it wasn't like I could leave to get anything. I rummaged through my freezer, only to find that anything in there would take 20 minutes to cook, at minimum, and that would be AFTER the oven preheated. I was almost in tears. (Maybe that seems extreme to some, but just see me when I've got low blood sugar, and you'll understand...) Anyhow, that's when I hear a knock on my door. I wasn't expecting any more clients! I opened to door to find my sweet neighbor, Katy, standing there with a plate of food. She said she had just made lunch and wanted to bring me some. I seriously wanted to start crying on my front porch! It smelled SOOOOOO good, and this is what it looked like:
She's such a sweetie! (She even used to bring me flan when she was making it)

Wow, that is awesome!! I have a neighbor that makes the most wonderful home made egg rolls. I love it when she brings some over. ;)
